Chocolate Chocolate Chip Muffins


Ingredients
2 cups flour
3/4 cup cocoa powder
3/4 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 1/4 cups whole milk
2 large eggs, beaten
2 tablespoons butter, melted
1/3 cup vegetable oil
1 teaspoon vanilla
1 cup semi-sweet chocolate chips, plus 1/3 cup additional chocolate chips for sprinkling

Notes / Directions
Preheat oven to 350 and grease muffin pan.  Combine dry ingredients and set aside.  Combine liquid ingredients in a separate bowl and whisk together.  Mix dry ingredients to liquid ingredients stirring only 10 times.  Batter should be visibly lumpy.  Gently fold in 1 cup chocolate chips and spoon batter into muffin pan.  Sprinkle remaining chocolate chips on top of muffins and transfer to oven immediately.  Bake 18-20 minutes, or until a toothpick comes out clean.  Remove from oven and let muffins cool for 5 minutes in the pan and then remove them.

Makes 12-18 muffins.
